1 Cake Mix of your choice
1/3 c. oil
1/4 c. water
1/2 bag semi-sweet chocolate chunks
1/2 bag chip flavor of your choice
Mix first 4 ingredients together, but don't over mix. Add chips and finish mixing. Press into 9 x 13 baking pan and bake for 18 minutes at 350 degrees.
2 lbs. hamburger (I use ground turkey - I don't eat beef)
3 cans diced tomatoes
1 can hominy (you can use corn if you want)
1 can pinto beans
1/2 cups water
1 can kidney beans
1 can green chilies (I leave these out)
1 envelope taco seasoning
1 envelope ranch dressing
combine & cook all ingredients. Serve with cheese and tortilla chips
CROCK POT CHICKEN ENCHILADAS
2 cups cooked chicken, chopped. (I used 2 cans of chicken that you find with the tuna)
2 10 oz cans red enchilada sauce
2 10 oz cans cream of chicken soup
2 cans Mexian style kidney beans
12 corn tortillas cut or ripped up into smaller pieces
Mix chicken, kidney beans and cream of chicken soup.
spray bottom of crock pot with non-stick cooking spray
pour 1/2 can of enchilada sauce on bottom
place layer of tortillas on top of the sauce
spread part of chicken mix on top of tortillas
sprinkle with cheese
top with tortillas, enchilada sauce, and cheese.
Cook on low for 4 hours.
